The menu was like a snapshot
of my youth, with offerings like Filipino - style spaghetti (it's a bit
sweeter than what most Americans are used to) and «Halo - halo» (literally translated, «mix - mix»), a delicious dessert made up
of shaved ice, evaporated milk, fruit, coconut, ice cream... and boiled
sweet beans.

When the rice and
sweet potato are almost ready place the drained / rinsed
beans, spinach, tamari and the final crushed clove
of garlic into a pan and sauté them for a couple
of minute until the spinach has wilted and the
beans are hot
I'm always a little wary
of black
beans in
sweets, but!
It's incredibly easy to make, it's just made
of brown rice,
sweet potato, spinach and black
beans.
You can also purée
sweet potatoes, broccoli, peas,
beans and so on... — A small piece
of feta cheese, cut in small pieces, is nice in a spinach soufflé or on a quiche... With 2 carrots, half a fennel, a third
of an onion, a half
of a radish, a fourth
of anything else you can prepare the nicest salads.
Dinner — soul food: pinto
beans, cornbread, a baked
sweet potato and collard greens, topped with hot sauce and ferments and a slice
of blue cheese
I especially loved their I am Whole bowl, which is made up
of mashed
sweet potato, adzuki
beans, sautéed kale, housemade kim chee, sea palm, black sesame seed gomasio, teriyaki almonds, garlic tahini sauce and either local brown rice or quinoa — it tasted even better than it sounds too!
Crispy
sweet potato skins stuffed with mashed
sweet potato, black
beans, cherry tomatoes, chipotle, miso and coriander, topped with a dollop
of tahini coconut yoghurt and homemade guacamole.
I like this combination
of greens,
beans and
sweet potatoes with Morrocan flavors - plenty
of cumin and maybe a touch
of pomegranate syrup (just a teaspoon for the whole pan).
There's also a simple, spicy corn and black
bean sauté, as well as some extra roasted
sweet potato cubes, more
of that salsa, and all the fixings.

bean's
sweet, creamy flavor and velvety after - tones work perfectly in any number
of cooking and baking applications (not to mention cold and frozen desserts).
We had tried this

Black Bean and
Sweet Potato Tostadas Black
beans are a tasty form
of fiber, and the same can be said for
sweet potatoes.
My multiple experiments in the kitchen to include as much
sweet potato as possible has led to one
of my staple year - round dinners — the kale & white
bean stuffed
sweet potato.
Smoky chipotle peppers, savory black
beans, and tender
sweet potatoes simmered in a spicy tomato sauce go into this incredibly flavorful vegan
sweet potato chili.There are a lot
of ways to make chili.
Few things improve black
bean soup more than spicy chorizo with a counter balance
of sweet peppers.
Each element
of these tacos is full
of fiber, from the
sweet potatoes, to the black
beans, and even the corn in the tortillas.
A layer
of almond butter, vanilla
bean paste, and a few other ingredients are topped with
sweet coconut and agave nectar for a no - bake version
of the childhood favorite.

Some suggestions: instead
of tomatoes, try any juicy, slightly
sweet vegetable; add some kidney
beans in there; replace the cucumbers with something equally crunchy, like fresh bell peppers; if you like the taste
of raw onions, you can put some
of those in; sub out the Feta for a goat cheese or perhaps Parmesan shavings; add roasted nuts or seeds; etc..
5 - 6 big handfuls
of baked tortilla chips 1 can black

sweet potato vegan nacho cheese (recipe below) 1 ripe avocado
This healthier version features a blend
of gluten - free flours (garbanzo
bean, fava
bean and brown rice), nondairy milk, ground flax seeds,
sweet currants and savory caraways seeds.
Two tablespoons add hint more sweetness and is a little reminiscent
of maple syrup baked
beans, although not as
sweet.
At the time, I was coming home from work to an always empty house, laying on the floor for an hour to re-calibrate from my day, working myself into a 30 minute or so run, and then reading a couple food blogs over dinner (usually a

Finally — I now use Tahitian Vanilla
beans exclusively — Tahitian
beans (look for Tahitiensis at the end
of the formal name) make a bit lighter and
sweeter extract than Bourbon variety
beans.
The pretty and tasty star
of this meal is a creamy puree
of baked
sweet potatoes and cannellini
beans encased inside flakey and buttery Phyllo dough.
Also, made my second batch
of your black
bean, quiona,
sweet potato chili... LOVE IT!
Spread a couple tablespoons
of the
sweet potato mixture on each tortilla, and top with the
bean / pepper mixture.
The
sweet pineapple goes so well with the savory
beans and peppers giving it a tropical twist, and the creaminess
of an avocado on top was the perfect complement!
