I had posted a pic
of my sweet potato toast a few weeks back and had a bunch of questions on how to prepare it.

After my first batch
of sweet potato toast, I decided to try this version in an actual toaster instead of the oven.
Yep, I think I've just come to the conclusion that this version
of sweet potato toast is quite possibly the best brain breakfast imaginable.
Not exact matches
It's great smeared on a biscuit or dinner roll, it's fabulous on top
of pancakes or waffles, it's perfect on top
of a
sweet potato, heck, it will even make a plain piece
of toast extra delicious.
Even though I only made one batch, we've definitely been eating our fair share
of this dip with everything from veggies, to
sweet potatoes (
sweet potato «
toast» is pictured), to burgers, chicken, even a breakfast hash.
This twist on a classic is a fun way to eat
sweet potatoes at the start
of the day —

The trick
of how to make
sweet potato toast is slicing your
sweet potato to the correct and consistent thickness.
I served it with polenta and a salad
of rocket and mixed lettuce with roasted
sweet potatoes, crumbled feta and
toasted pine nuts and pepitas.
It's what we thought raw coconut oil was when we first discovered it and tried to spread it on
toast instead
of frying
sweet potato fries with it.
This chicken protein bowl is packed full

OK, here are some favorites we've been cooking up at my place: - vegetable curry (grind my own whole spices, use whatever veggies we get in our weekly CSA share; radishes / beets, eggplant, squash, greens, etc)- quick kale (sauteed with coconut oil, chili flakes, garlic, [lemon grass], soy sauce, lemon juice)- pac choi w / sauteed mushrooms «chinese» style (with fish sauce, rice wine vinegar, jalepeno / chili, soy sauce, etc)- roasted radishes w / poached eggs - «teamwork pasta» — this is your recipe for pepper and cheese pasta, but it helps having two sets
of hands to make it in our house... we put an egg on this too
of course - tuna pasta (chopped onion, garlic, lemon zest, chili flakes, tuna, olives — easily adaptable to what you already have in the house and like)- roast chicken on friday - roasted

I would have never thought
of using
sweet potatos as

I love the idea
of using

Eat it by the spoonful, add it to your coffee, blend it into smoothies, pour it into chocolate moulds or cupcake cases, pop it in the freezer and made legit super-food freezer fudge, these cupcakes with it, heat and drizzle it on cookies, carrot / banana bread (official recipe coming soon), avocado

One time I used roasted
sweet potato instead
of the squash, and
toasted sunflower seeds instead
of the pipitas.
And look at me now sharing my second savoury recipe
of the week: lima bean
sweet potato toast.
The
sweet potato and chia seeds work together as the base for this, then it's deliciously topped with peanut butter and chocolate sauce,
toasted coconut, chopped pecans and chunks
of banana.
Place a handful
of arugula on
toast and top with a 1/3 cup

I have never tried to make
sweet potatoes into
toast!!!! Both
of these recipes look amazing, I've never had
sweet potatoes as a dessert but so many people say it tastes like candy when it's caramelized, I guess I've just never thought about trying it as a treat.
We've been living off

of this salad for our lunches, but this version, with curried chickpeas,
toasted pine nuts, squash or
sweet potato and chard is my favorite.
In Peru, they serve it with slices
of cold
sweet potatoes and chuclos (corn on the cob), while in Ecuador, it's usually made with shrimp accompanied by popcorn,
potato chips, or
toasted corn nuts made from the giant kernels
of corn native to that country.

sweet potato toast... I figured I'd go with it and make something with things I already had lying around in my apartment.
So far, I've mashed Al Arz tahini into baked
sweet potatoes with a pinch
of salt (OMG), whisked it into some lemon - tahini salad dressing, drizzled it on

of honey, and even baked a batch
