meal in my restaurant and topping it off with a piece
of French Silk pie, I decide that the pie was
so good that I want six more pieces, that would manifest a secondary, depraved appetite.
I feel like every time I go to the supermarket, apart from salads, the choice for ready
meals for one person that are full
of vegetables, without too many preservatives and chemicals and vegetarian / vegan that actually taste
good is
so limited!
One
of the
best things about them is that they're incredibly rich in plant protein, including B12 which lots
of vegans can be short
of and eating plant protein at every
meal is
so important to keep your energy levels consistent.
By now I am almost fully pledged vegetarian (I still eat fish sometimes though, but that need decreases) As a former meat eater I enjoyed Golabki, Flaki and Pierogies, both are polish cuisines because even though I was born in Germany, half my heritage (specific: my mother) comes from Poland and I grew up with traditional polish cuisine, which still counts as comfort food to me (Omg I need to mention I tried
so often to make Bigos Vegetarian without sacraficing the taste, but it's still a challange) Bu talso my other half
of heritage come from Hungary, I also enjoy traditional Hungarian food like Langos and Palacsinta (
so good) Basically I've been brought up with no fear from anything new, I have no prejudices, try everything I can and enjoy home cooked
meals made with local basic ingridients the most!
I only ate there once but it was one
of the
best meals I've ever had and we feasted on
so many different dishes!
I hate having my house hot,
so it is a favorite for the summer as
well as the cozy comfort
meals of winter.

I know many
of you like to
meal prep as
well so I've teamed up with a few
of my blogging girlfriends again this month to bring you six healthy and delicious
meal prep recipes to add to your weekly rotation.
This gratin can be made and assembled ahead
of time and baked right before serving
so it's perfect fare for special occasion
meals when there's lots going on and it's
best to work ahead.
The
meal options I came up with had to be: # 1 things that would be fairly easy to prepare (I wasn't about to take an extra hour on Sunday to make something elaborate), # 2 had to be foods I could easily manipulate the nutritional profile for (ensuring a balance
of protein, carbs, and fat), # 3 the food had to store
well in the fridge or freezer, # 4 they had to reheat
well in either the toaster or microwave OR be eaten cold right from the fridge, and # 5 ideally, they needed to be things she could easily eat in the car on the way to school (remember, it takes us at least 20 minutes with no traffic to get to school
so eating in the car gives us even MORE time to sleep lol).
The combination
of sweet, savory and spicy was
so delicious and would work
well with a variety
of meals — a fabulous addition to our side dish rotation!
For me, this means healthy fats — it's an excellent way for me to get more oily fish into my diet; fermented vegetables — which are served with every savoury
meal around here; and, since we both eat first with our eyes and because they're
so good for you — adding a garnish
of fresh herbs.
Creamy mac n cheese was one
of my favorite
meals as a kid, but now that I'm all grown up, I'm
so much more careful about being healthy and nourishing my body with the
best foods.
It's also VERY flavorful (tofu is basically a sponge that soaks up whatever flavor you cook it in) and quite cost effective, as

so I tried to sub with flax seed

There are lots
of ways to boost the protein in salads, everyone should be aiming to get 25 — 30 grams
of protein per
meal adding beans (edamame, garbanzo, and black beans are some
of my favorites) and adding a modest amount
of nuts with heart - healthy oils like (almonds, walnuts and pistachios are
so good) are two ways to reach optimal protein intake — I also love these Snack Crisps from Eat Enlightened.
I am now adding beans back into some
of my main
meals, and will dabble with quinoa too
so it is not such an issue, but it feels
good to me knowing that I can easily hit my protein needs even if all I want is a huge plate
of salad or veggie curry for dinner.

so good after all!
This week, I got lucky, as a bunch
of recipes were just on the forefront
of my mind,
so I knew what kind
of meat to buy, and I'm guessing we'll do
better with produce next week, as we know what to expect (lots
of greens) and can
meal plan a bit
better.
Leafy greens are extremely
good at healing the body and giving you energy
so that's why I recommend you try to include RAW greens with every
meal, either in the form
of a salad, green smoothie, green soup or a green juice.
