Thank you for this amazing recipe one question though, I added my
buttermilk substitute (milk + lemon juice) and egg mixture until the consistency was like shown in the picture, but was left
with about 1/3 -1 / 4
of the wet ingredients... I measured my ingredients on an electric scale, could it be because I used cake flour instead
of all - purpose?

of a problem
with my Belgian waffle maker — although that might have had something to do
with my subbing in
buttermilk and 2 % for the whole milk, resulting in a thicker consistency than you described.
- Preheat oven to 350 degrees and line 1 pan
of regular muffin tins and 1 pan
of mini muffin tins
with cupcake liners (I only used 8 regular sized and 8 mini muffins for the bouquet)- Add the cake mix,
buttermilk, oil, almond extract, and vanilla extract to an electric mixer and mix on medium for 30 seconds - Add eggs one at a time and beat until well mixed - Turn mixer to high and beat for another 2 minutes - Fill liners about 2/3 full
with batter - Bake for 15 - 20 minutes, or until cake tester comes out clean - Allow cupcakes to cool while preparing the cream cheese frosting
Also, I have WAY too much
buttermilk in my freezer that has been causing more anxiety than is socially acceptable (such is the by - product
of homemade butter making, I suppose: which I imagine will be heavenly
with those waffles!).
I end up making sour milk
with a dash
of white vinegar and subbing it for the
buttermilk, but the fact that the recipe contains an inconvenient ingredient sort
of subtracts from the «perfectness»
of the recipe for me (yeah, I'm a weirdo).
Served
