Granola that stirs like a dream instead of spilling off
of the cookie sheet while you're trying not to burn your arms on the oven rack.

Drop heaping tablespoons
of batter on the baking
sheets, making sure to leave 2 inches between the
cookies as they spread slightly
while cooking.
Keep a
cookie sheet in the oven and place the pancakes on it to keep them warm
while you use the rest
of the batter.

Find a tahini that is not too terribly runny, one that stays emulsified for a
while after stirring and accept that oil will spread out
of these
cookies as soon as you begin spooning them on to parchment covered baking
sheets (and definitely use parchment).

of the internet was baking Alison Roman's
cookies, I somehow got stuck on a different recipe from Dining In - and, it's all about the
sheet pan dinner.
It was helpful for me to let the
cookies sit on the
sheet a few minutes after they came out
of the oven so that the chips could re-harden after melting a bit
while in the oven.
If you use a
cookie sheet, use one with rims; the pumpkin is going to release a lot
of liquid
while it's roasting.
