I've actually made batches
of cranberry oatmeal using
dried cranberries in the past — I love it, but it's not something you see sold
on store shelves.
Whether it be savoring our succulent medjool dates, snacking
on our
dried blueberries or
dried cranberries, cooking or baking with our sun
dried tomatoes, we are certain you will love the quality
of our
dried fruits.
Sometimes I've added shredded coconut, pecans,
dried cranberries, and a sometimes about a 1/4 cup
of oats, and I've cut back
on the honey / maple syrup and added a bit
of moisture (milk or water).
In the meantime, I have my leftovers to look forward to: — a spinach salad with breast meat, fresh pineapple chunks,
dried cranberries, and some shredded carrots and apples (I love colorful salads)-- my Pumpkin chicken skillet, based off
of Gluten - Free Mommy's pumpkin chicken tortillas (but I try to limit my corn - intake so my version tops the filling

It just dawned
on me that it reminds me a little
of the goat cheese log that Costco carries in November & December that is covered with cinnamon and
dried cranberries.
But
on top
of all that I have also crammed in
dried cranberries, sour cherries, mixed candied citrus peel, dates, walnuts and sunflower seeds.

Bread pudding is one
of my favorites and this recipe is quite similar to my own «method» (meaning that I do not use a real recipe but incorporate what is
on hand with the basic ingredients) My very, very best version uses leftover, homemade biscuits that have been split, buttered and toasted... add some
dried peaches cut into small pieces, the plumped
cranberries, toasted nuts and usually a chopped apple.
The wet and
dry ingredients are simply stirred together and then the batter is evenly placed
on top
of the
cranberry sauce.

of dried fruit you have
on hand such as blueberries,
cranberries, apricots, sour cherries, raisins, and figs.
For use as decoration or just for snacking — spread the
cranberries on a sheet
of baking paper and coat generously with granulated sugar and allow to
dry.
I omitted the cauliflower because I didn't have it
on hand and used a mixture
of sunflower seeds, pepitas, and
dried cranberries.
Serve
on a salad
of: mixed greens or spinach, fresh cut strawberries or raspberries,
dried cherries or
cranberries, thinly sliced red onions, thinly sliced cucumbers, feta cheese crumbles
What I love most about these muffins is the inherent adaptability to use a wide variety
of seasonal ingredients and flavor combinations (replace the blueberries with
dried cranberries and walnuts), as well as the fact that they are easily transportable which makes them an ideal muffin for kids and families
on the move.
