I have to agree with a previous poster on the amount of liquid left in the bottom
of the pan after cooking.
This helps the muffins brown correctly and helps them pop right
of the pan after baking without adding additional calories or sugar to each individual muffin.
(I use this Chicago Metallic Meatloaf Pan: It has an «elevated lifter» that allows grease to drain into the bottom, while allowing you to lift the meatloaf out
of the pan after baking for easier slicing.)

Sautee veggies in an oven - safe
pan in 2 tsp
of olive oil (I added the tomato and avocado
after the onions were done the way I like them).
