I made this with carrots instead
of squash and instead
of coconut milk used a bit
of stock and half a block
of creamed coconut
so it was more
of a spicy carrot puree on the sweet potato (and substituted the chick peas for green peas plus added some spinach) and it was delicious.
After half an hour take the
squash out
of the oven and scoop out the seedy part using a spoon, the
squash should be nice and soft now
so it should come out really easily.
For packed lunches I normally make big batches
of quinoa and brown rice with apple cider vinegar / lime and salt and then do a big thing
of roasted veg — things like sweet potato and
squash cubes,
so I throw a mix
of that into a tupperwear with some raw veg — things like avocado, grated carrot, tomatoes and then some hummus / lentils / chickpeas / seeds for protein.
For this I just baked the
squash for an hour or
so, rubbing each piece with olive oil and a sprinkling
of chilli, after cooking for that long they become
so wonderfully tender
so every bite literally melts - in - your - mouth.
They're soaked in warm water while everything else is cooked to make them
so extraordinarily sweet and juicy, allowing them to enhance the natural sweetness
of the grated carrot and roasted
squash while also creating the perfect contrast to the savoury crunch
of the toasted pine nuts.
Hi Holly, I found using 2 butternut
squashes wasn't enough when you diced them up because you have to take out all
of the seeds —
so 4 seemed to do the job very well!
I realize I have yet to do a total recipe post like Alyssa does
so I'm excited to share with you all a recipe I made after coming across an abundance
of yellow
squash from a client's garden.
* You might end up with more chicken mixture than needed, it all depends on the size
of the
squash you have
so you might start with half the amount and see if you need more.
Since then, I've had trouble getting my hands on another red kuri,
so I turned to buttercup
squash (pictured above), which is another member
of the hubbard
squash family.
I've never tried spaghetti
squash before, but heard about it and how everyone like to use it instead
of pasta,
so I decided to jump in and try it.
These spaghetti
squash chicken boats are not super spicy, but for my little family they are just right as I have young kids,
so feel free to increase the amount
of hot sauce to suite your taste.

so I thought why not update my favorite food
of all time with these delicious wintertime crops?
I couldn't find any butternut
squash at my supermarket
so I used sweet potatoes instead (and omitted the regular potatoes) and added about a half cup
of dried apricots along with the tomatoes to give it a bit
of a sweet pop!

so that you can have some
of that «quickie ranch» on hand.
here in northern cal, we (i) are just getting starting with our winter
squashes,
so at the beginning
of squash season this fits in
so nicely!
Add the
squash to a sheet pan and drizzle on a tablespoon or
so of olive oil.
Then you can use them in all sorts
of different dishes, throw them on the grill or pan fry them quick quick for a great side... I normally will bake 2 or 3 sweet potatoes and 1 or 2
squashes during the week - end
so that I have them ready and on hand for the rest
of the week.
It was marvelous, and I loved the subtle flavors
of the
squash contrasting to the kale... and I'm
so glad I left out all the herbs I suggested that I might try.
So scale the amount
of veggies and pasta to the size
of your
squash.
So delicata
squash has to be one
of my most favorite food discoveries over the past few years.
I've read on other blogs that people, who are starting to explore these spaghetti
squash would mix 1 cup
of it with 1 cup
of regular pasta,
so you still have some pasta taste in your dish.
Spaghetti
squash doesn't quite taste like rice,
so the flavor was slightly different than a traditional Mexican - style rice bowl, but the
squash is very mild and mostly takes on the flavor
of whatever you are cooking it with,
so it was still delicious.
So next time you find yourself with a surplus
of butternut
squash and a shortage on time, whip this up, I promise you will love it.
I actually do love
squash and pumpkin bisques,
so I wondered how I'd feel about this one since you loved it because it is antithetical to those kinds
of soups.
I am a huge fan
of chard, spinach, and kale, not to mention collard, turnip, beet, and daikon greens, and they do pair
so nicely with sweet potatoes and
squashes.
I was able to reheat the fat wedges
of squash in the microwave for several nights,
so even if you're only cooking for one or two, definitely try this.
I used butternut instead
of pumkin, and unfortunately, my oven is broken
so I wasn't able to roast the
squash.

so much!
The other night after toasting pumpkin seeds the oven was hot
so I cut both a small pumpkin and acorn
squash in half, slathered them with butter, kissed them with a sprinkling
of salt and in they went.
So I stuffed a big meaty sweet dumpling
squash with a buttery, crispy mix
of sage sausage, chopped pears, dried cranberries and roasted / salted pepitas.
So I flicked on the oven and set to work with the peeler, slipping the
squash out
of its skin.
I've been getting tired
