As we're on the doorstep
of winter squash season, I thought I'd
do a quick round up
of a few
of my favorite delicata
squash recipes from the archives, and link out to a handful
of delicata gems I've spotted out and about as well.
What I can
do, and have started
doing as a matter
of routine (and, to be honest, as a matter
of free therapy) every fall, is to collect my weight in pumpkins and other orange - fleshed
winter squash, poke the bejeezus out
of them with a knife, pack them into a hot oven on sheet pans, and walk away for an hour.
* Whilst zucchini
does provide nutritional value to the diet, it doesn't attain the «Super Food» status
of its cousin, the
winter squash (butternut
squash and spaghetti
squash, for example).
1 medium apple 1/4
of a medium avocado 1/2 cup cooked broccoli 1/2 cup cooked

does food taste better than fiber pills, it also provides vitamins and minerals absent from tablets.
Add chopped onions, garlic and leeks and sautée for a minute or so, then add grated fresh ginger, cinnamon, turmeric and a pinch
of salt, then add chopped pumpkin (or any orange
winter squash will
do), sweet potato and carrots.
You
do want to make sure that you're including enough starches like
winter squashes or a little bit
of fruit to keep your glucose needs met.
For about eight months I
did a low carb adaptation
of the GAPS diet (no
winter squash, carrots, nuts except almonds, limited fruits - just green apples, berries and white grapefruit).
Spaghetti
squash is one
of my favorite fall veggies - even though I can buy it all year round, I don't start wanting it until the fall /
winter.
