I added cinnamon to the batter
as well which was nice, but I think for next time I will add a bit
of vanilla extract and nutmeg to the batter

muffins, which I like, so that I can bake it in my microwave sized countertop oven (I overlap a pair
of 2 × 3
muffin pans to make a 3 × 3) and not heat up the kitchen
as much
as the regular, big, under - the - stove one would.
Cranberry Orange I use ground flax meal
as a substitute for the gluten a lot
of the time
as well, but I tried using it with these

But,
as with most
muffins, using only applesauce can compromise texture just a little, and we thought the 2 tablespoons
of heart - healthy canola oil really improved the texture and flavor.
