Before beginning my 30 days
of vegan challenge, I decided that aside from a few meat substitutes to have with dinner, and some vegan tuna, I didn't want to purchase any of the vegan «coldcuts» that are available in most markets.

challenges and promise
of cultured meat.
I haven't done a lot
of gluten - free baking up to this point but I like to
challenge myself in the kitchen and I've been learning more about gluten - free baking from Ricki Heller's «Naturally Sweet & Gluten - Free» — a gorgeous
vegan baking book whose recipes are exclusively gluten - free, as well as free from refined sugars.
And our wonderful host, Michael, was sweet enough to accommodate all
of our food
challenges: one gluten - free vegetarian - blogging -
vegan - for - the - month (me!)

Vegan desserts and cookies are one
of the things I like to
challenge myself with in the kitchen.
Whatever the case may be, going
vegan has always been seen as a lot
of work; a huge
challenge to undertake.
Our church has recently started an Ethical Eating group and several
of the families are

This morning to celebrate the beginning
of the
challenge I made
vegan scones!
Now, one
of the biggest
challenges with making a
vegan pie filling is getting it to set correctly.
This week, I
challenged myself to put together gluten - free
vegan lunchboxes, as I thought people out there might find ideas for 5 days
of lunchboxes useful.
The clotted cream proved more
of a
challenge and it took me a few trials and errors to come up with something I loved — a mixture
of vegan butter, icing sugar and coconut cream to create a cheat's version
of clotted cream.

challenge of making
vegan ice cream very seriously.
I created this classic pizza by special request from my foodie pal Anne who felt that the combination
of pear and caramelized onions in renditions she had tasted was too sweet, never mind the little

As one
of her birthday present requests was a unicorn onesie I thought a Raw
Vegan Unicorn Cake would be the perfect
challenge.
Because a lot
of people take food really, really personally and feel like I'm insulting them or

This months Daring Cooks
challenge was hosted by Debyi

Our aim was also to showcase the diversity
of the
vegan community and to
challenge any lingering stereotypes.

During the holiday season when menus are full
of turkeys, hams and roasts, it can feel
challenging coming up with a vegetarian or
vegan main course that doesn't feel like an after thought....
One
of my biggest
challenges has been coming up with recipes for healthful
vegan baked goods.
At Ubuntu Restaurant and Yoga Sudio in Napa, Calif., one
of chef Jeremy Fox's favorite
challenges as a classically trained chef is coming up with recipes that steer clear
of dairy and eggs so that 80 percent
of the menu is
vegan - friendly.
One
of the main
challenges of vegan baking is coming up with the correct combination
of ingredients for a moist batter that doesn't fall apart, without eggs.
So,
vegans are no longer faced with the
challenge of finding a protein powder.
There's no denying that I'm a fat kid at heart — give me the opportunity to cover pasta in fried salty bits and cheese and heavy cream and I'll go all out (and then hide the rest

of January, seems to have been extremely popular this year and I've seen more people than ever getting involved.
Cooking
vegan is always a fun
challenge, because even though so many foods I normally cook with are off - limits it makes me think
of interesting ways to include foods like protein - rich quinoa and hemp seeds, how to use fresh herbs effectively with spices, and got me totally excited to make a fig puree.
While an obscure food to most, chlorella is popular among
vegans for its protein, B vitamins, and iron — nutrients that can be
challenging to obtain enough
of from plant foods alone.
