of vegan chicken (I used beyond meat strips), roughly chopped 1.5 cups of mushroom soup (I used Imagine Creamy Portobello Mushroom Soup) 4 tbsp of nutritional yeast 1 tsp of salt 1/4 cup of breadcrumbs vegan mozz to top (optional)
Enough to make a big pot
of vegan chicken noodle soup!

I've never been a huge fan

vegan version
of chicken soup has all the wholesome goodness you'd expect
of grannie's version, but without any byproducts
of animals.
Here are some
of my favorite additions: toasted pine nuts, capers, olives, a handful
of cooked quinoa, sliced baked tofu (from a package is fine), sliced warm Chickpea Cutlets (or any
chicken - y thing), garlicky sourdough croutons,
vegan bacon, (deep breath... ok, proceed), tempeh (Chimichurri or Garlicky Thyme), grilled seitan, grilled asparagus, grilled portobello, roasted squash.
1 tbsp olive oil 1 med onion, coarsely chopped 4 cloves garlic, minced 1/2 red bell pepper, diced 1/2 green bell pepper, diced 10 pieces okra, tops removed, sliced 1 cup chopped pumpkin or squash (if out
of season use 1 can puree) 3 sprigs fresh thyme leaves (about 1/2 tsp), dried okay 1 tsp sea salt, more to taste 1/2 tsp black pepper, more to taste 1 can (about 2 cups) coconut milk 1 cup
chicken broth (or vegetable stock to make vegetarian /
vegan) 1 scotch bonnet or habanero pepper (optional) 1 lb fresh spinach, stems included, coarsely chopped 6 chives, chopped

chicken with tempeh and the cheese with Daiya cheese, and the sugar with sucanat, I turned this into one

chicken nuggets to name a couple — but they wouldn't be that healthy or simple and I'm not into spending lots
of time making recipes for dinner, especially if they have more refined ingredients..

vegan recipe, but I made it not
vegan... Instead
of vegetable broth, I used
chicken broth, and threw in some small
chicken pieces.

This
vegan chicken noodle soup is full
of all the good stuff.
This Creamy
Vegan Gnocchi Soup has all
of the flavors
of chicken noodle soup with none
of the
chicken.
3/4 -1 lb chanterelle mushrooms coarsely chopped 1 sprig
of rosemary picked and chopped 2 finely chopped shallots 1/4 cup flour 3 cups
chicken stock (or vegetable stock if you are going
vegan) 3 tbs cup olive oil salt pepper
I used vegetable Better than Bullion in place
of chicken broth to make it
vegan, and also added carrots, celery, a tomato, and a dash
of cayenne for the heck
of it.
1 1/2 cups diced celery 1 1/2 cups chopped apple 1 cup
vegan mayonnaise Pinch
of salt 1/2 teaspoon
of pepper 2 tablespoons lemon juice 3 cups cooked
vegan chicken, chopped Chopped parsley for garnish
What's in it: 1 medium - sized spaghetti squash (about 3 - 4 pounds) 5 tablespoons vegetable oil, I used half peanut half canola Kosher salt and Freshly ground black pepper 2 eggs (optional, I omitted this to keep mine
vegan) 1 (15 - ounce) package firm or extra firm tofu, water pressed out and diced * 1 red onion, thinly sliced 6 cloves garlic, finely minced 2 cups carrots, cut into matchsticks 2 cups bean sprouts 6 scallions, sliced Other optional veggies: I added a cup
of sliced white mushrooms, but broccoli, peapods, or any others you like would work as well 4 tablespoons Pad Thai sauce, more to taste ** 1/3 cup peanuts, chopped 1/4 cup cilantro, chopped 1 lime, cut into wedges * you could alternatively use
chicken or shrimp if you're not a tofu fan ** I used a jarred pad thai sauce to save some time but check out the original recipe link above to see the full sauce recipe if you want to go homemade
This week I am sharing a
chicken, mango and black bean salad with a
vegan cilantro lime sauce (SCD friendly) and one
of my favorite summer veggies, Kohlrabi in a refreshing summer salad.
Often it contains pancetta and a meat - based broth like
chicken stock, but in this recipe, those elements are out
of the mix in favor
of a filling,
vegan soup.
If you're not the tilapia - eating sort, I think they would be just as good with
chicken or shrimp -LCB- or
of course tofu if you're vegetarian or
vegan -RCB-... YUM!
I branched from the
vegan part
of it the second time I made it adding some cheese and
chicken which also tasted great!
I grated some tofu, yes grated, whipped up a batch
of my
vegan kale walnut pesto and satisfied the eff out
of that
chicken pesto -LSB-...]
Wow, what amazing soup, I used 4 cups
of distilled water, all organic cauliflower, celeriac, garlic, and
chicken shock cube, next time will make it completely
vegan.......
For
vegan: use vegetable stock instead
of chicken stock, use olive oil instead
of ghee, and substitute coconut bacon for the bacon
