Here it's made
vegan — a mixture
of flaxseed (or chia) and water replaces the eggs and non-dairy
milk is used in place
of the usual buttermilk.
Note that, because I am not a
vegan (my interest in non-dairy
milks is just for the sake
of variety), I add an egg to the Swiss chard gratin to make it richer, but you can hold the egg if you prefer — the béchamel alone is enough to produce a lovely texture — or you can substitute silken tofu.
Another method is using non-dairy
milk mixed with either a few tablespoons
of ground flaxseed or
vegan mayo to thicken it.
In the beginning
of the year I found out I have food allergies (egg,
milk, etc) and IBS that is leading me to being strictly
vegan.

vegan Otai.
Of course there are more obvious ways to keep your cocktail
vegan friendly — if you're making a cream based cocktail, you can alternatively switch it up with soy or almond
milk so it'll still have that creamy edge.
