My family has recently gone
vegan, so I'm always on the lookout for something truly tasty and satisfying and not just a pile
of lentils and grains (not that there's anything wrong with that... This
soup just rocked my world.
This healthy,
vegan, cream
of celery
soup is just perfect for getting right back into shape after the over indulgence
of the festive period.
I hadn't meant for this
soup to be so quintessentially early January — that would be, virtually fat free, dairy free, gluten free (miso dependent),
vegan and the very picture
of healthful do - gooding.

I have honestly never made any kind
of squash
soup before this, but I have seen numerous beautiful photos from some
of my favorite
vegan bloggers and cookbook authors.
This
vegan version, which ends up somewhere between a
soup and a stew, relies on canned chickpeas and their liquid for body, but giving them a bit
of a simmer with some aromatics — garlic, onion, bay leaf, and smoked paprika — adds a ton
of flavor back to them.
This
vegan version
of chicken
soup has all the wholesome goodness you'd expect
of grannie's version, but without any byproducts
of animals.

But the thing is, it's also very versatile and cozy

We make it

of almond milk in place
