of my most wonderful meals while I was there — I am now hooked on YUBA!

Vegetarian Cooking Under Pressure» by Lorna Sass, there are many one pot pressure
cooker recipes, and a lot
of them include beans, but I really wouldn't know how to do any
of them in my instant pot.
My favorite way to use up various greens is Deborah Madison's Greens with Potatoes recipe - can't remember off the top
of my head if the recipe is from The Savory Way or
Vegetarian Cooking for Everyone, but essentially it's sauteed greens with some
cooked potato chunks tossed in, and a little olive oil / lemon juice / vinegar for flavor, plus salt and plenty
of pepper.
One

I am not a vegan but my husband is a veggie and I
