My favourite ways to enjoy healthy carrot fritters are as part
of a warm breakfast bowl with poached eggs on top, or thrown into a mixed salad (I recommend a dollop of hummus, too).

This has been on my list
of new
breakfasts to try for a while, and now that spring has arrived (
warmer weather), I finally got to make it.
We're taking the dessert
of breakfasts and transforming it into a savory centerpiece worthy
of being a true entree, then topping it with spicy,
warm chili to really take it to the next level.
We lost power and on one
of the particularly cold mornings it was lovely to be able to
warm up the leftovers and serve it as a perfect hot
breakfast for the whole family.

In an effort to coax me and my cozy high socks out

warm up, my taste buds simultaneously begin craving fresh, cool foods — and therefore my usual hot
breakfast of oatmeal is the last thing I want in the morning.
I did a lot
of smoothies over the summer, mostly because it's way too
warm outside to eat a hot
breakfast.
And since I'm the only one in my house willing to eat healthy, I am going to

of leftovers for
breakfast and top with two eggs.
While this recipe has a summery, snacky feel to it, I promise there are some
