of wheat taste diminished in each loaf from the least risen to the most risen, while the sourdough «tang» increased.
The sour taste was more forward than in the Wheat Montana version of this bread, and it had more
of a wheat taste as well.

For bread, for example, I buy rye bread (which is
wheat free) rather then gluten free bread — it
tastes better and doesn't have any

taste due to the added sugars that the yeast feeds on and a tiny bit
of coconut sugar adds that same hint
of flavour to this bread.

The Natural
Wheat's protein / gluten levels helped add strength to the rye bread, and the bland (or neutral)
taste of this flour allowed the rye
tastes to come through.
I don't know what this
tastes like without the flax and
wheat germ, but I imagine it just enhances the overall nuttiness and
of course, ups the nutritional value.

Sorry this thing is giving me a hard time from my phone... I used whole
wheat flour because I was out
of regular all purpose... I usually can't
taste a big difference except things are occasionally drier but these weren't because all the pumpkin... But I replaced the ginger with turmeric, the allspice with cardamom (in the amounts called for) and omitted the cloves entirely and they were so delicious!!!
