of the season that we were actually home to enjoy the games for an all - day Sunday extravaganza, I whipped up this slightly healthier, very nontraditional version
of the classic: a
white bean chicken
chili.
I make
white chili, red
chili (confession... using the McCormick mix) with ground turkey, and then at least once a year I make a big batch
of Cincinnati
chili, which everyone loves.
Who wants to spend all day in the kitchen when you can make a big pot

chili to feed the crowd?!
Other than the fact that it is healthy, I love how easy

There are so many levels
of flavor going on inside each little enchilada: creamy
chili - spiced sweet potato and pinto bean spread, garlicky black beans with red bell peppers and jalapeños, and a rich
white cheddar sauce.
A Yocco's Hot Dog consists
of a Hatfield brand hot dog, grilled well - done on a flat - top grill, in a soft steamed hotdog roll with spicy brown mustard, chopped

of (low sodium, rinsed) beans (2 kidney, 1 each
of another; I like black and small
white or pink beans), 3 - 4 red / yellow / orange sweet peppers (I but at the farmer's market when fresh and cut up and freeze the extras for making
