I personally prefer dark chocolate chips instead
of white chocolate chips, but I am willing to give it a try in the future.
Melt the 1/2
cup of white chocolate chips in a double boiler over medium - low heat or in the microwave for about 1 minutes.
I decided to add a
bit of white chocolate drizzle to these, since the filling isn't overly sweet, so I wanted a bit of a sweet topping.
I'm not a huge fan
of white chocolate in general, but over the past few I learned to like to a little more.
But if you'd like to dip the whole animal cookie into the frosting you'll need about 5
bars of white chocolate to do that.
When the chocolate has set take out the tray (s), and melt the small
amount of white chocolate in the microwave until it is just about fully melted.
That looks fantastic, I much prefer dark chocolate too but have been using a
lot of white chocolate recently for some strange reason.
Thankfully at the very bottom of my baking drawer I found a
bag of white chocolate chips and just barely a cups worth of dried cranberries.
If I didn't run
out of white chocolate chips while making these cookies, I would probably be making them again right now.
Remove from heat and pour about 1/2 teaspoons
of white chocolate into each mini muffin cup, using about 3/4 of the melted chocolate.
Ingredients 1/2 a
package of white chocolate chips 1/2 a package of chocolate chips * If making gluten free, be careful to read the package because some vegan brands have barely in them.
You can make them any flavour you like and even these ones which are packed
full of white chocolate chips are still going to be healthier than anything you can buy in a shop.
The chocolate type has been produced 80 years after the launch
of white chocolate as the third type, which followed dark and milk chocolate.
The base is a really simple
mix of white chocolate, condensed milk, digestive biscuits and a touch of ground ginger.
I'm not a huge fan
of white chocolate so may replace that with extra dark or milk chips, maybe some chopped walnuts if i'm feeling crazy.
After all, they are mostly cocoa butter and sugar, and that right there is
sort of white chocolate, so I can understand the temptation, but you really shouldn't.
