I used
jasmine rice instead
of sushi
rice - honestly it turned out fine and I've heard many people make sushi from other types
of white rice - they just need to be sticky varieties.
The only real change that I made to the recipe was to use a brown
jasmine rice instead
of a
white one.

The purple
rice is actually blended with a percentage
of naturally fragrant
white jasmine rice (Hom Malee)- hence the purple /
jasmine name.
I had a bag
of special
rice with 10 mixed wild and purple
rice types, and also mixed in some
white jasmine rice.
In fact, I went years without
white rice, but in my recent pursuit
of healing / managing SIBO (small intestinal bacteria overgrowth) I discovered that
white jasmine rice is better tolerated than sweet potato for me.
