Instead of traditional all - purpose flour, I used a combination
of white spelt flour and The Protein Chef Baking Protein by Labrada Nutrition.
Spelt flour can be used instead, a combination
of white spelt flour for the all - purpose flour and whole spelt flour for the whole wheat flour.
The night before preparing the walnut swirl bread, mix 50 g
of white spelt flour, 50 g of water and 1 tablespoon of your active sourdough starter.

white flour combo, and, duh, blueberries + appropriate spices instead
of cherries.
And although I opted for a heartier base
of spelt flour, unbleached or

flour will work just the same.

White Spelt Flour
From what we have read,
white spelt flour has many
of the same benefits as whole grain
spelt flour.
After having made both
of these treats a dozen times before then, and using store bought
spelt flour (and sometimes organic
white flour) in both recipes, we knew something wasn't right!
The recipe is based on a delicious vegan shortbread that uses
spelt flour and brown sugar instead
of white flour and sugar.
Add 1/2 cup
of spelt flour and 1/2 cup
of all - purpose
flour to a bowl, also add 1 teaspoon
of baking powder, 1 teaspoon
of sea salt, 1/2 teaspoon
of white sugar, 1 tablespoon
of extra virgin Spanish olive oil, 1/3 cup
of luke warm water and start mixing everything together, once all the ingredients are mixed together, get in there with your hand, continue to mix until you form a dough, then knead inside
of the bowl for a couple
of minutes and form the dough into a ball
Still, if you're curious, my favorite mix is about half and half bread and cake
flour by weight (200 grams each), or, in the case
of the craggy cookies pictured above, a mix
of bread
flour, cake
flour, and a whole grain
flour like
white whole wheat, sprouted wheat, rye,

If you don't have light
spelt flour, unbleached or
white whole wheat should do the trick, but I'd stick to the higher end (3/4 teaspoon)

spelt flour in this recipe because I like the taste
of it but any
white or whole wheat
flour will do just nicely.

I live in a fairly affluent suburb, but the only one
of those ingredients available at my local Woolies was
white spelt flour.
