This time
of year my favorite produce includes butternut
squash and certain varieties
of winter pears, so I thought why not update my favorite food
of all time
with these delicious wintertime crops?
here in northern cal, we (i) are just getting starting
with our
winter squashes, so at the beginning
of squash season this fits in so nicely!
With roasted butternut
squash puree, kale, bacon, lots
of cheese, and a perfectly chewy whole - wheat crust, this is truly the perfect
winter pizza!

This reminds me
of my favorite quick / easy / delicious
winter dinner: peel and cube a butternut
squash, sweat it
with a chopped onion and some garlic in a stockpot until soft, mix in 1/2 (or whole) can
of coconut milk, add curry powder, salt, and a splash
of sriracha to taste, puree the whole thing (I love my immersion blender!)
This healthy pumpkin bread recipe can be made
with roasted pumpkin or any type
of roasted
winter squash.
Because the grocery store ran out
of canned pumpkin and the
winter squash was on sale, I made this
with a 4 lb butternut
squash instead.
I made this last night (

of (low sodium, rinsed) beans (2 kidney, 1 each
of another; I like black and small white or pink beans), 3 - 4 red / yellow / orange sweet peppers (I but at the farmer's market when fresh and cut up and freeze the extras for making chili in the fall /
winter); 1 or 2 zucchini and / or yellow
squash, and (drum roll) 1 can
of organic PUMPKIN PUREE!
I topped my
winter squash and beef stew
with a sprinkle
of finely chopped fresh curly parsley.

If you can't find sweet dumpling
squashes, you can use any kind
of winter squash in this recipe (or try it
with sugar or «cheese» pumpkin).

of the water, or stirring in blanched hearty greens or spinach at the end, for example.
