zucchini pie made with a Crescent roll
crust brushed with just a hint
of mustard.
Zucchini crust pizza with beet hummus spread is the best lightened up version
of regular cheese pizza I've ever tried!
I wish I could have brought this
zucchini crust pizza to the party for everyone to try but I would have had to make 5 - 6
of them for everyone to get a taste!

I made a pizza for me and Matt using a 7 - grain
crust from Whole Foods and a bevy
of fresh veggies — onions, bell peppers, garlic, and shredded
zucchini on my portion (the bottom right quarter), and mushrooms and Boca grounds on the rest for Matt.
Arrange
zucchini mixture in bottom

Zucchini pizza is a great way to sneak in extra servings
of vegetables, and it is naturally lower in carbohydrates and higher in fiber compared with traditional
crusts.
Brown rice and almond flour help this
zucchini crust stay chewy and crunchy, while a lemony pea pesto topping and sprigs
of arugula add plenty
of springtime flavor.
From
zucchini to cauliflower, eggplant and quinoa, I have literally made a pizza
crust out
of just about everything.
Follow the same pie
crust and custard instructions and instead
of zucchini and mushrooms, use onion and chicken or spinach and bacon or whatever combination you can imagine!
I had to make some substitutions based on what I had on hand: walnuts added to the
crust since I didn't have enough pecans, a yellow squash instead
of zucchini, and almond butter instead
of cashew butter for the filling.
My mousakka uses lentils and walnuts in place
of meat, layers
of eggplant and
zucchini, and a cozy mashed potato

For the pizza
crust, you can use almost any mild vegetable — rutabaga, jicama,
zucchini, squash, or any mixture
of those.
The only changes I made were that I used more
zucchini than tomatoes (our CSA just gave us A LOT
of zucchini) and I cheated and used a frozen pre-baked pie
crust that I already had in the freezer.
