My tomatoes almost gone bad turns into tortilla soup, at the end of the week, my veggie drawer turns into either a stir fry or a big hearty vegetable soup and if I have either (or both) zucchinis and leeks, I make an orzo, a farro salad or some some sort of fritter.

This coconut, zucchini and spinach soup has a mixture of flavors that fascinates me, a touch of coconut with a touch of chili, the texture is very soft and with the crusty bread bits and the poppy seeds it is just so delicious.

The main difference between this recipe and a chicken noodle soup recipe (besides the obvious omission of noodles) is that I used zucchini in this soup to add some vegetables and flavor.

Starting off with Smoked Chicken Minestrone soup, a hearty soup loaded with tomatoes, potatoes, zucchini, cabbage, navy beans and chunks of tender smoked chicken.

So if you want to make your guests feel like royalty and like their wrapped in a blanket of homey comfort but it's the middle of the summer, I'd recommend opting for this dairy free zucchini soup.

Cook until soft, about 10 minutes / Add chopped tomatoes and cook about 5 minutes / Add cheese rind (in cheesecloth if you wish), cranberry beans and water to the pot / Cook until beans are about halfway cooked, about 20 minutes / Add potatoes and cook until beans and potatoes are tender / In a large skillet heat more olive oil and saute chard stems until tender / Add zucchini and beans, salt well and saute a few minutes, just until tender / Add chard leaves, salt again and saute until wilted / Remove the cheese rind from the tomato soup base and add vegetables / Garnish with fresh basil (or pesto), freshly grated cheese, salt and pepper and if you have it, a big piece of burrata is absolutely divine.

Besides the simultaneous happiness and heartache that comes with finally getting to see your people after a few years away, here are some other things I'm really looking forward to: staring at the blossoming chestnut trees outside of my mom's kitchen window, visiting the food market across the street from there every day, fresh sorrel soup, mom's melt - in - your - mouth zucchini fritters, and a good morel mushroom season, if I'm lucky.

Of all the zucchini I process in a summer, I have to say that I have never made soup.
