oil, but you could use any fruity olive

While I do use virgin coconut
oil in some of my recipes, I like using refined coconut here because refined coconut
oil does not taste like coconut, and I personally don't care for the strong taste of coconut unless it's countered by an equally strong flavor such as
chocolate or
mint.
I'm having issues with these and the
chocolate mint ones... when I freeze them the
oil separates to the top.
If you really don't like coconut, you may also want to try making the
mint chocolates with the refined coconut
oil, so they don't have that coconut taste.
