I decided to use some walnut
oil for this
recipe, because it gives the dish a unique flavor and provides you with more omega - 3 fatty acids
than most
other nut oils.
The only modification I made to the
recipe was that I sauteed the garlic in cold - pressed rapeseed
oil rather
than vegan margarine, and then added just a little margarine to the food processor along with the
other ingredients.
I didn't change a single thing about the
recipe other than cutting 12 slabs instead of 8 which I do recommend and omitting the
oil from the dressing which didn't seem to affect it whatsoever.
My
other changes to the original pancake
recipe were using pumpkin in lieu of sweet potato (but I put in more
than called for) and coconut
oil in place of butter.
As per
other suggestions I added approx 1 T
oil and 2 T water
than was called for in the
recipe.
Also, for some reason coconut
oil works better
than any
other oil in this
recipe, although you could go with some
other neutral flavored baking
oil if that's what you've got on hand.
BUT sometimes using a drop of an
oil or an extract is worth it so much more
than cramming something in a
recipe that clearly doesn't belong and then trying to compensate for that with all kinds of
other ingredients, etc... I don't think thin mints were ever meant to be made with fresh mint leaves anyways
