Instead of using milk in the batter for this pancake, I used a banana - soy smoothie (1 cup soy milk & 1 banana) which I soured with a tablespoon of vinegar — and instead of egg, I used a heaping tablespoon
of okara.
Your recipe should steam or bake / toast raw
okara for 25 to 45 minutes and cool before using, to make the proteins more digestible and remove undesirable enzymes.
For the «ricotta» I
used okara instead of tofu, and added a bit of wasabi (you can tell I live in Japan here...) and white wine to give it some kick.

called okara, which is what's left over after pressing the soaked and then ground soy beans to get the milk.

To toast
okara, which dries it out and makes a dry «fluffy okara», spread the fresh okara thinly on an ungreased but nonstick cookie sheet; bake in oven at 200 degrees Fahrenheit for 35 - 70 minutes, stirring occasionally, until dry.

You can substitute
