It's day 3
of Squash Week... and today it's a healthy twist on an
old classic: Spaghetti (Squash) and «
Meat» balls.
Both
of my picky children LOVED them, even the 4 yr
old who has never eaten
meat other than the occasional dinosaur - shaped chicken nugget (only the dino ones — never the regular).
The recipe is great in and
of itself, but I love that it comes from an
old New Orleans newspaper clipping, that the pecans are referred to as «pecan
meats,» and that the recipe is credited simply to «the Ursuline Nuns.»
I'm in the camp that baulks at pearl barley (although it reminds me
of the duty food I made from
old vegetarian recipes when I first gave up
