Lay the
slices on a clean kitchen towel and lightly salt on both sides, lay another kitchen towel on top and repeat until all of the slices are used and lightly salted.
Drain the peas and spread them out
on a clean kitchen towel.
Remove the celery and place
it on a clean kitchen towel to dry.
Once rinsed, place
them on a clean kitchen towel and squeeze to remove excess water.
