I think just a little less chilli (not for me) I used lamb, cooked quickly and made a fresh salsa (red onion, red chilli, tomatoes,
with lime and coriander), guacamole, cheese and tabasco
on a soft
flour tortilla.
Corn
tortillas go best
with the tacos, but we've also used
flour tortillas (quartered) when we don't have corn
on hand.
I take a
tortilla shell made by Food for Life, or a kind of flatbread (Nicole's recipe
with tapioca
flour) and my local Subway makes my breakfast sub
on my shell or flatbread.
Char the
tortillas on a gas burner (I prefer
flour tortillas), slap some meat
on them and top
with crema or a little sour cream and if you have it, pick de Gallo.
