We have more people coming for our dinner this year, so this recipe will serve about 8 - 10 people as a Thanksgiving side (and hopefully some leftovers to
go on a turkey sandwich).
As much as I love Thanksgiving dinner, I am not one of those people that like to put stuffing and / or cranberry
sauce on my turkey sandwich.
Whether it's a few slices of California
Avocado on your turkey sandwich, some berries in your oatmeal or some spinach in your smoothie, you can get all the goodness that produce provides, including vitamins, minerals, fiber and deliciousness, with just a little creativity and a desire to do something good for your mind and body.»
didn't want to spend that much
money on a turkey sandwich (yes the secret's out, you now know that in addition to being lazy I'm also cheap) so my turkey addition is a little more paltry than it's one inch thick deli counterpart.
I love dipping roasted sweet potatoes in it, drizzling it on my roasted veggies, on top of fish tacos (or any tacos), on eggs, instead of
mayo on a turkey sandwich... you get the idea.
The cranberry mayonnaise is also simple to make — and it gives a little extra spunk to this sandwich (also
good on turkey sandwiches).
So, now I eat it on burgers, huevos rancheros, tacos, with chips,
on turkey sandwiches...
Romesco is truly versatile, so grab a knife and smear
some on turkey sandwiches or a broccolini cheesesteak for a new dimension of flavor.
