Once you taste it you're going to want to put it on your cornbread, your baked potato, your steak... and you'll dream about melting it all over next year's corn
on the cob.
* As much as I love plain ol' corn
on the cob, I love this Roasted Corn with Mexican Sour Cream, Chile, Cheese and Lime even more.
When you can get corn
on the cob it is often sold already husked (I know that's bad for the corn, but it's the way it is.)

I rarely cook my corn unless I'm serving
it on the cob or in a dish where it's all being sauteed or baked (although occasionally a quick saute over high heat with a pat of butter and a little salt can be heaven).
