on the Farm
This simple Baked Eggs with Asparagus and Peas was all I wanted for brunch the other
day — tender asparagus still with snap, sweet peas, and the hero, the
egg, baked in a nest of green and with crunchy breadcrumbs dusted
on top.
These
days, putting an
egg on any dish may come across as passé, but there's a good reason why we just can't stop.
We could eat for
days tuna / salmon salad, which is coming soon
on my blog, potato salads, and
egg salad as well.
My least favorite
day of the week is Monday and this morning I had a fried
egg on a GF bagel!
I have yet to give into my desire to just feast
on egg rolls but I'm really only one bad
day away from probably letting it happen.
Back in the
day, I was boiling them, got side tracked with a baby, and wound up with
egg on the ceiling, so I'm all for the steaming method!!
But
on a good
day they'll eat fruit and toast or
eggs and toast or a frozen yogurt pop.
I was just thinking about making

day and now I think they are definitely going
on the menu for next week
in a cup of tea, cook my
