Today, we're publishing Beth Kowitt's latest jaw - dropper
on the future of the
food industry, which explains how biotech is using the
fermentation process to synthesize gelatin and other animal products without actually needing input from animals.
During
fermentation, bacteria (and yeast) either added (yogurt and kefir) or present naturally (many vegetables and fruit) feed
on various sugars and carbohydrates in the
food.

However, lacto -
fermentation is taking the starches and sugars naturally present in the
food and converting them into lactic acid, this happens by the presence of lactic - acid producing bacteria that are naturally present
on foods (and the process usually takes 2 - 6 weeks).
Once the
fermentation takes place (usually 2 - 3 weeks depending
on the
food), you can move to cold storage and it will be shelf stable for many months (even further enhancing the flavor).
My first thoughts of «
fermentation» conjured up images of rotting, putrid
food sitting out
on the counter.

food that is being fermented — whether it's cabbage or cheese.
For most of humanity's history, people relied
on a totally different method of
food preservation:
fermentation.
I just want to share the ayurvedic perspective
on you recipe — combining the tart cherry juice with dairy may be effective for sleep, BUT it is an unhealthy
food combination, that can cause gut
fermentation, and thus gassiness, tummy aches, constipation or loose stools -LCB- depending

Vegans do not require any supplements, any more than non vegans... animals don't make b12 even, they get it from the
fermentation of certain bacteria, and we can too... from just
food... other than that, the latest science is clear
on how a plants - only diet is healthier across the board, for everyone...
Alcoholic
fermentation is the conversion of sugar into carbon dioxide gas (CO2) and ethyl alcohol through the work of yeasts found
on the
food itself and within the culturing agent (kefir grains, kombucha culture, whey, ginger bug, etc.).
If you and your family haven't hopped
on the lacto -
fermentation bandwagon yet, consider a high quality probiotic supplement until you can work these
foods in
on a regular basis.

foods take
on their probiotic properties through a process known as

I'm continuing to focus
on traditional
foods, experimenting more with lacto -
fermentation and soaked flours and grains, and eating plenty of healthy FAT.
While you can do wild
fermentation, which is allowing whatever is
on the vegetable or fruit that you're culturing to just naturally take hold and culture the
food, this method is very time consuming.
