1 tablespoon olive oil 1 medium onion, diced 2 large coves garlic, minced 1/2 cup water or vegetable broth 16 ounces soy crumbles or diced chicken flavored seitan (or 8 ounces faux meat plus 8 ounces cooked rice) 1/2 cup (4 ounces) vegan cream cheese 1 1/2 cups shredded vegan cheddar or cheddar - jack blend 1 package taco seasoning or 1 tablespoon ground cumin, 2 teaspoons smoked paprika or chili powder, and 1 teaspoon dried oregano 2 cups roasted butternut squash chunks (spray 1 - inch chunks with non-stick spray and roast at 450 degrees for 10 minutes on each side) 1 can black beans, rinsed and drained 1 - 15.5 ounce can corn, drained 1/2-15.5 ounce can pureed pumpkin

Take a deep baking glass dish, put the macaroni mixture in it, and sprinkle grated cheddar cheese on top with crushed red chili and oregano.

If you have extra, add a couple more pieces of the cheese on top of the warm chili.

I like to put Chili Sauce, (kind of like a doctored up ketchup), on the bread first, then the cheese mixture, then diced tomatoes.

As I went through the recipe, I realized I had a lot of similar ingredients on hand, so I did a riff on the original recipe: chopped dates in place of currants, cucumbers in place of zucchini, goat cheese (with sundried tomatoes and chili flakes, from the local farmer's market) in place of feta, a basil / thyme / chive combo from my window box in place of the dill and green onions.

Take another look at the bottom of the bread and if it's a golden toasted color, turn the piece of bread with just cheese on it over on top of the bread with the chili on it to make a sandwich.

Spoon some of the chili mixture on top of each hot dog, followed by some shredded vegan cheese and chopped onions.

2 to 4 ounces Garlicky Greengo 1/4 cup Mayo 3 TB sour cream 3 TB minced fresh parsley 1 garlic clove, minced 1/2 tsp chili powder 1/4 tsp ground black pepper 1/4 tsp cayenne pepper (optional) 4 tsp juice from 1 lime 1 oz grated Cotija cheese Mix together, refrigerate for at least 1 hour then slather on your roasted or grilled corn on the cobb.

I get about 2 - 3 kilograms of them, I use about the half to make a really really hot chili paste that you can use to pep up sauces or just eat on bread with some cheese on top.

We don't eat a lot of meat and also keep a kosher kitchen, so here are my go to's these days: three bean veggie chili (inspired by whole foods — GREAT leftover food); roast chicken (Ina's); stir fries with tofu or chicken (super into cabbage and you can get it to taste like moo shoo with the proper sauces); roasted brussel sprouts with barley, cranberries, walnuts, and some goat cheese depending on who you are; grilled chicken (breasts... I know they're not your thing).

Serve leftovers, plan on having a few meals in the freezer ready - to - go (try this Cincinatti Chili), make slow cooker meals (two of our favorites are Black Bean Turkey Chili and Jamaican Chicken), repurpose leftovers (this is a good one ~ Triple Cheese Chicken Pasta Bake), make recipes that reheat easily (another family favorite ~ Turkey Bolognese), and have a handful of tried - and - true recipes (this is the easiest recipe ~ Tomato Paste Pasta) you can count on.

OK, here are some favorites we've been cooking up at my place: - vegetable curry (grind my own whole spices, use whatever veggies we get in our weekly CSA share; radishes / beets, eggplant, squash, greens, etc)- quick kale (sauteed with coconut oil, chili flakes, garlic, [lemon grass], soy sauce, lemon juice)- pac choi w / sauteed mushrooms «chinese» style (with fish sauce, rice wine vinegar, jalepeno / chili, soy sauce, etc)- roasted radishes w / poached eggs - «teamwork pasta» — this is your recipe for pepper and cheese pasta, but it helps having two sets of hands to make it in our house... we put an egg on this too of course - tuna pasta (chopped onion, garlic, lemon zest, chili flakes, tuna, olives — easily adaptable to what you already have in the house and like)- roast chicken on friday - roasted sweet potatoes - omlets - challa french toast

Organic corn tortillas loaded and baked with our tempeh chili and Daiya cheese, topped with fresh chopped tomato, onion, lettuce, salsa, cilantro, avocado with a dairy - free sour cream on the side

I followed the recipe pretty closely (which has been reprinted here), except I omitted the chili (because I didn't have one on hand) and replaced the soft goat cheese with crumbled ricotta salata, which might be a new favorite around here.
