on unsweetened almond
milk and
coconut water as my liquids for the relative nutritional benefits with fewer
calories than juice or
milk.
And I substituted a cup and a half of stock for the second can of
coconut milk to cut down
on calories.

on the size of your eggs / the richness of your
coconut milk, it should be around 180
calories per serving!
Because
coconut milk is quite high in
calories, and I tend to have non-stop ice cream cravings and having this ice cream every day would do a number
on my hips!
If you need more
calories in the form of fat in your diet, then add an extra side of avocado to your breakfast, sip
on a can of
coconut milk throughout the day, whip some ghee into your coffee, or add a mini-meal between lunch and dinner, heavy
on the olives or Primal Kitchen mayo.
You may think I'm strange but I don't track
calories and always favor full - fat
coconut milk and fats from healthy animals raised
on pasture.
I have had to rely
on some
calorie dense foods to fill in the gaps, such as peanut butter,
coconut milk, olive oil, etc..
