You can use any vegetable you wish try
asparagus, pumpkin, carrot, avocado, cucumber, shiitake mushroom, tofu, thin sliced
egg omelette, etc... Thinly slice or julienne vegetables, parboiling if necessary tie
on with a thin (1/4» or 6 mm) strip of nori or vegetable strip wrapped around the whole sushi if needed..

ONE of my favs is the Springy Frittata with
Asparagus, Scallion, and Fontina because I love to get more protein in my diet... and always have
eggs I must use before they hard boil
on their own...
Last night I sauteed some
asparagus in olive oil, seasoned it with salt, pepper and chili pepper flakes, then quickly fried an
egg in a little butter to place
on top.
To serve, lay spears of
asparagus on two serving plates, top with a poached
egg and drizzle over plenty of sauce.
I have to say, this Gratin was one of the best things I have eaten recently, with buttery crusted bread topped with Swiss cheese, prosciutto,
asparagus, béchamel and a beautiful
