A while ago my friend Amanda (it's her amazing and florescent carrot butter

toast in the background) introduced me to a pre-made quinoa tabbouleh salad at Costco, it had extra bells and whistles, like mung beans and brown rice, but it was lacking something so I decided to re-create it at home.
This raw bread is crispy
on the outside like
toast, soft
on the inside like real bread; and only made with
whole ingredients like pumpkin seeds, oats, red bell pepper, fresh corn and flax seed.
They are also delicious for dipping fruit or spreading
on whole wheat
toast.
She now bakes at least one loaf of 100 %
whole wheat bread a week for sandwiches and
toast, but this week, I got back in the kitchen and made a vegan variation
on our favorite recipe and spiked it with Bob's Red Mill 8 Grain Hot Cereal.
Ingredients: - 6 inch medium zucchini cut into chunks - 3 cloves garlic, left
whole - olive oil for drizzling - kosher salt + pepper to taste - 1/2 teaspoon smoked paprika (if you don't like anything smoky, add regular paprika)- 1/2 teaspoon cayenne pepper, more or less depending
on how spicy you want it - 2 cups of cooked quinoa - 1 cup of panko breadcrumbs - 4 hamburger buns
toasted Radicchio Slaw - 1 small head of radicchio, sliced into strips - 1/2 tablespoon mayo - 1/2 tablespoon sour cream - juice of half a lemon - 1 garlic clove minced - salt to taste Tangy mustard sauce - 1/4 cup cup of yellow mustard - 1/4 cup of grainy dijon mustard - 2 tablespoons of honey - 1 tablespoon of apple cider vinegar - salt to taste
The avocado dressing and
toasted almonds provide tons of
whole food healthy fats to this salad, so we're already covered
on that front.
And using the sheet pans made the
whole process easier than trying to
toast them in a pan
on the stove top.
I
toasted up some
whole grain bread, spread
on some veganaise, layered the thinly sliced tomatoes, sprinkled
on some fresh cut basil and gave a healthy dosing of Himalayian Pink Salt.
OK, here are some favorites we've been cooking up at my place: - vegetable curry (grind my own
whole spices, use whatever veggies we get in our weekly CSA share; radishes / beets, eggplant, squash, greens, etc)- quick kale (sauteed with coconut oil, chili flakes, garlic, [lemon grass], soy sauce, lemon juice)- pac choi w / sauteed mushrooms «chinese» style (with fish sauce, rice wine vinegar, jalepeno / chili, soy sauce, etc)- roasted radishes w / poached eggs - «teamwork pasta» — this is your recipe for pepper and cheese pasta, but it helps having two sets of hands to make it in our house... we put an egg
on this too of course - tuna pasta (chopped onion, garlic, lemon zest, chili flakes, tuna, olives — easily adaptable to what you already have in the house and like)- roast chicken

whole wheat pasta with roasted veggies for lunch / dinner; and snacks
on nuts and fruits or fruit / veggie (from the spinach) smoothies with protein powder when she's hungry.
Snack
on tomato crostini: in the oven,
toast whole wheat bread till crusty, then top with tomato sauce, herbs, a little grated cheese, and reheat until the cheese melts.
Then I spread the cooked eggs and tomato sauce
on a piece of
whole wheat
toast.
Because they
toast at different rates, what I did was scatter the cashews
on half of the tray and let them
toast for about 5 minutes, then I took the sheet out, added the millet to the other side, then let the
whole tray
toast for five more minutes
If you don't have the time or inclination to make it, you could just toss some
whole toasted sesame
on top of your porridge.
I like to use
whole spices and
toast them in a skillet until fragrant, than crush them in a mortar and pestle or spice grinder, but you can also use pre-ground spices if that's what you've got
on hand.
