I had already planned
on making a lasagna that day, but I'd only ever made the
tofu «
ricotta» with extra firm (non-silken)
tofu before.

Serve in bowls with additional sauce
on top and a dollop of
Tofu Ricotta Cheese Sauce and a sprinkling of parsley.
From there we spread a thick layer of cashew
tofu ricotta on the eggplant slices, followed by a layer of tomato sauce.
We topped with some more tomato sauce, if you have left over cashew
tofu ricotta, you can toss that
on too if you like!
On the side, a nutty multigrain ciabatta spread with more of that savory roasted garlic, and a lemon - and - oregano scented «
ricotta» made from
tofu!
However, I will say that my favorite part of this recipe was using the
tofu ricotta mixed into the pasta before baking, so if you are short
