on) 1 cup green peas 2 large carrots, peeled and cut into cubes 1 cup red cabbage cut into stripes Good handful of green beans 1 1/2 cup of white yogurt (I used Provamel) 1 tbsp Apple cider vinegar 1 tbsp dijon mustard 1 tbsp olive oil Salt and pepper to taste For a
vegetarian option add 2 hard - boiled eggs Method: Steam or boil the potatoes, carrots, green beans and green peas until soft.

Back when I went veg Whole Foods was nearly unheard of, I didn't know of any
vegetarian restaurants, and if I wanted some tofu or other exotic
ingredient I'd have to get mom to take me
on one heck of a road trip.

I lived mostly
on pasta and peanut butter because the few
vegetarian cookbooks that my mom could find at our local library contained hard - to - find international
ingredients and meat substitutes (like tofu) that were not readily available in our area.
There also aren't too may «out there»
ingredients (by which I mean the dairy and meat replacements and weird alternative powders that some
vegetarian / vegan recipes rely so heavily
on, and really turn me off as an omnivore).

Quinoa is one of my favorite
ingredients to use, because it's packed with protein, and as a
vegetarian, I have to be
on the lookout for protein ideas!
Ingredients: 2 tablespoons extra-virgin olive oil (1 turn of the pan) 1 medium onion, finely chopped 3 cups canned vegetable stock, found
on soup aisle (I use a few cups of water and a few teaspoons of
vegetarian chicken base here) 1 (14 1/2 ounce) can diced tomatoes with juice (I blend it first so that it's not chunky, since a few family members don't like tomatoes) 1 (15 ounce) can black beans, drained and rinsed 2 (15 ounce) cans pumpkin puree (avoid buying Libby — it's owned by Nestle) 1 cup corn, frozen or canned (drain and rinse if canned) 1 cup heavy cream (I use 1 % milk, but you can use soy milk as well) 1 tablespoon curry powder 1 1/2 teaspoons ground cumin 1/2 teaspoon cayenne pepper (I don't add this since my kids don't do spicy foods) coarse salt 20 sprigs fresh chives, chopped or snipped, for garnish
Hi Riley — I know this can be a real issue for
vegetarians and vegans — sometimes animal - derived additives can appear
on ingredient listings under vague descriptors such as «natural flavors.»
I have always known that Healthy Choice prided itself
on excellent
ingredients so that was a no brainer but being a
vegetarian meant my choices were further limited.
