Hi, I apologize if this has been answered, but I'm not finding it in a search — I'm just wondering what the TWT's take is
on winter squash specifically: delicata, butternut, acorn, etc..
We've seen studies
on winter squash that show GI values between 55 - 65 as well as studies that show lower GI values between 50 - 55.
While most of the studies
on winter squash's benefits for health have been conducted on laboratory animals, there have been numerous studies on the various nutrients in pumpkin that support the claims made here.
Great
on winter squash, sweet potatoes, regular potatoes, or anything else that needs an inviting kick.

The one change I might make (as I am
on Weight Watchers) is to use
winter squash instead of the sweet potato — but, honestly, this sounds yummy just the way it is.
Cozy up to a cup of the red pepper butternut
squash soup and a blanket
on a chilly
winter day.
If you're in a pinch, you can substitute one 15 - oz can of pureed pumpkin for the one pound of
winter squash (simply heat the pureed pumpkin gently
on the stove - top in a glass bowl over boiling water before adding to the food processor with the rest of the ingredients).
I love
winter squash of all types, but usually fall back
on butternut because I find it easiest to peel (also use a plain old vegetable peel).

winter squash recipes from of one of my lovely nutrition clients, Joanna, I'm sharing my recipe for carrot ginger
squash soup today.
As much as I say summer is my favorite season, based purely
on produce, I do long for
winter squash all year round.
Winter squash and lentil loaf is a delicious recipe that's easy
on your budget.
Add the fresh ginger, the stock and the
winter squash and simmer for 15 - 20 minutes
on medium - low.
I used a little of both of these varieties in this soup but you can use these or other
winter squash that you have
on hand like «Delicata», «Butternut», «Acorn» or «Hubbard» to name a few.
This pot of soup included some of almost everything I had in the vegetable category — leftovers, the kitchen's flotsam and jetsam — simmering
on the stove, imbued with the health of
winter plants like onion, garlic, carrots, celery, fennel, mushrooms, potatoes,
squash, sweet potatoes, cabbage, kale, and a few destitute peas from the hinterlands of the freezer.
When I asked them to elaborate
on what that meant, they described the process of walking to a market, picking out a beautiful
winter squash, buying it, then spending several hours preparing it for a meal.

Winter Squash
As we're
on the doorstep of
winter squash season, I thought I'd do a quick round up of a few of my favorite delicata
squash recipes from the archives, and link out to a handful of delicata gems I've spotted out and about as well.
What I can do, and have started doing as a matter of routine (and, to be honest, as a matter of free therapy) every fall, is to collect my weight in pumpkins and other orange - fleshed
winter squash, poke the bejeezus out of them with a knife, pack them into a hot oven
on sheet pans, and walk away for an hour.

I always have a solid patch of kale somewhere out there, I love growing lots of beautiful lettuce for fresh summer meals, and despite the lack of space, I give a large chunk of it to
winter squash because it stores easily and we rely
on it to get us through the long
winter!
Depending
on the variety, potatoes and
winter squash might take longer, but checking for tenderness by poking with a fork is the best way to test for doneness.
