These look like a very
healthy version of the
ones I bought in London at Ottolenghi's and use to
eat for
breakfast.
Breakfast is
one of the hardest meals for some reason for me to get them to
eat healthy.
Fast forward 4 years — baked porridge is still
one of my favourite
breakfasts and something I always want friends / family to try if they're unsure about
eating healthy.

Without that sleepy stuffed feeling you get from
eating traditional
breakfast foods that are full of sugar and carbs, this
one is a nice balance of protein, complex carbs and
healthy fats that help you feel satisfied well past lunch.
Not just any sweet treat though — a versatile
one that's make - aheadable, portable, and
healthy enough to
eat for
breakfast, as a snack, or as dessert.
So,
one or two little homemade vegan protein
breakfast bars in the morning will give you a boost of energy, keep you satisfied for hours, will trick you into thinking you're
eating dessert, and are super
healthy.
And since I'm the only
one in my house willing to
eat healthy, I am going to warm up a serving of leftovers for
breakfast and top with two eggs.
One serious change I noticed when I began
eating a
healthy breakfast is that I felt more focused and energetic than before.
One of the things I love most about these crumbles is they are essentially the same as a
healthy granola on top of fruit, which means you can legitimately
eat dessert for
breakfast!!
Besides surrounding myself with
healthy snacking options and keeping myself hydrated, I know that
one of the best ways to banish the «must have fat and sugar» urges is to
eat a
breakfast heavy on protein and fiber.
I've never been
one who can just
eat a granola bar on the run, so I am a huge fan of quick,
healthy breakfasts that fill me up, like pancakes,
breakfast stews, etc..
But since most people come up with slightly more traditional resolutions like
eating healthier, I decided to start off the month with
one of my new favorite
breakfasts: these Chocolate Chip Banana Bran Muffins!
