soup, but
out of curiousity: what happens to the other half
of the
onions?
All
of those flavors might sound a little sweet for
soup but the coconut milk is actually very subtle and the vegetable broth and
onion balance it all
out.
When it got to the part where they pulled the Ratatouille
out of the oven, I'm looking down at my french
onion soup and thinking, «What am I doing with THIS?»
You can get even more
out of your healing bowl
of soup by adding potent ingredients such as ginger, garlic and
onions, medicinal mushrooms and dark leafy greens.
I pretty much always start
out my
soups by sautéing
onions with spices / dried herbs and a pinch
of salt until translucent.
Instead
of venturing
out into the cold night air, fill homemade Italian Bread Bowls with chunky potato
soup featuring potatoes,
onions, carrot, celery, and savory seasonings.
So here is my very simple recipe for my
onion soup that turned
out fabulous and
of course I used store - bought beef and consume this time but I am not giving up on making homemade beef stock but it just has not worked
out for me so far.
Well, I tell yeah, this easy to make French
onion soup requires no ramekins (which I know a lot
of people don't own), it's made with a rich vegetable broth instead
of beef broth, and it uses a combinaton
of cheeses that work amazingly together, which create a flavor that is
out -
of - this - world!
It turns
out that the nutty toasted notes and mild sweetness
of the beer go nicely with the best part
of this classic
soup, the caramelized
onions.
Also, my kids aren't fond
of the tomato and
onion pieces, so I will sometimes take
out the chicken, puree the
soup with an immersion blender until smooth, and then add the shredded chicken back in.
I actually tried
out a bunch
of variations on this recipe and I think what I came up with is the best vegan French
onion soup ever.
Meanwhile... — Melt a few tbsp
of coconut oil and a tbsp
of olive oil in the bottom
of a large
soup pot — Add a chopped
onion, leek, shallot, ginger (2 tbsp), and curry powder (1tsp), and cook over moderate heat until starting to brown — Add in 1 / 2c white wine (they say dry, I don't know that mine was, but it turned
out ok) and let evaporate
