The stew is naturally vegan
sans optional cheese topping — and I really urge you to keep it vegetarian — but if you must have meat, you could easily add some diced chicken sausage or shredded chicken into the mix.
Remove from the oven, add
the optional cheese and return to the oven for an additional 3 to 5 minutes, or until the top of the cheese is melted and starting to brown.
To assemble the tacos, layer a couple of tablespoons of the taco «meat», add lettuce, tomato, (
optional cheese) and top with the Avocado Lime Cream and a sprinkling of chopped red onions.
Add chickpeas,
optional cheese (it's great both ways!)
Top with olives and
optional cheese.
Serve, topped with the avocado mixture and garnished with cilantro and
optional cheese.

Previously, the vegan option was to skip the proteins altogether and of course, pass on
the optional cheese and sour cream.
Although I recommend avoiding
the optional cheese to keep this dish highly alkaline.
