Any
carrots would work well for this (I just bought some
orange, purple, and white ones
at the farmer's market that I'm looking forward to eating).
I used regular
orange carrots from the store in the above picture, however if you have any farmers markets near you that sell purple
carrots or other colours, these can make a great change and will certainly grab the attention of others
at the table (as shown in the picture below) Instead of cutting these
carrots up, as they are usually smaller, these can be roasted whole, use more
carrots per person for these type too.
I make a similar meatless chili in a crockpot (I make a LOT
at once and freeze for a quick lunch or dinner for 1 or 2)- and I think you'll like this idea: along with
carrots, celery, onions and garlic, I usually use 3 - 4 cans of (low sodium, rinsed) beans (2 kidney, 1 each of another; I like black and small white or pink beans), 3 - 4 red / yellow /
orange sweet peppers (I but
at the farmer's market when fresh and cut up and freeze the extras for making chili in the fall / winter); 1 or 2 zucchini and / or yellow squash, and (drum roll) 1 can of organic PUMPKIN PUREE!
3 - 4 cups fresh, organic and seasonal veggies (use
at least one green veggie such as spinach or kale and one
orange or root vegetable such as
carrot, sweet potato or squash)
News flash, they didn't eat what we so lovingly call
carrots either,
at least not in their sweet
orange glory that they've become.

This trick came to me when I was
at the grocery store recently, and saw a bag of baby «rainbow»
carrots for sale (by «rainbow,» think purple, white, yellow and
orange carrots).
Almost all my carbs comes from
carrots (i eat raw
carrots about a kilo for lunch
at times), bananas, sweet potatoes,
oranges, apples.
Unless you want a dry, prepackaged iceberg lettuce salad with a few
carrot shavings and
orange tomatoes, you're going to arrive
at your destination ravenous and cranky.
At this time, many
orange vegetables are coming into season, like squash, pumpkins,
carrots, and sweet potatoes.
Including
at least 10 plant foods in your daily diet — dark leafy greens (spinach, kale, chard, parsley, cilantro), bright
orange and yellow (
carrots, squash, mangos), red plants (tomatoes, ripe red peppers, grapes, radish), florets (broccoli, cauliflower), pods (green beans, peas, lentils), purple skinned (blueberries, eggplant, cabbage) will provide you with abundant phytonutrients for many health promoting actions that can help offset cancer therapy side effects, and even reduce the ongoing process of cancer.

I know I need to go slow and add carbs one
at a time... so far Japanese sweet potato — one a day mixed up in my daily bowl of 6 oz protein (including 3 boiled eggs), 1/2 cup spinach / brocoli cooked, 12 baby
carrots and one small beet — steamed or and 1/3 cup
orange winter squash... 2 tabs my homemade mayo — chopped up and mixed in my daily bowl and wrapped in nori sheets — I eat ever 2.5 or 3 hours stop
at 5 start again
at 7 am... so far so great!
I recently bought a bag of organic
carrots at Costco that had
orange, white and PURPLE
carrots.
MacKinnon and Smith, for example, topped up their larder with the following
