orange muffins using the ratios / weights you provided.

While searching for a recipe to
use up my extra cranberries I came across this one for cranberry
orange muffins.
And I love
using orange in baked goods — these
muffins look wonderful!
1) 3 cups almond flour 2) 3 large eggs 3) 1/2 cup honey 4) 1/2 cup butter or ghee or coconut oil at room temperature — extra for greasing if not
using paper
muffin molds 5) 1 tablespoon of
orange zest 6) 2 teaspoons of baking powder 7) A pinch of salt 8) 1/2 cup of slivered almonds
I was
using what I had to make some Christmassy
muffins: I ran out of ghee so had half - and - half ghee and coconut oil; ditto almond flour so
used hazelnut; I replaced the
orange zest and juice with segments from two seedless clementines, halved; then I added some cinnamon and nutmeg.
The only thing I changed was I
used a tsp of cinnamon spice mix that had (cinnamon, nutmeg, allspice,
orange peel, cloves and ginger) and I didn't have any parchment so I
used a
muffin tin liner which made for perfectly shaped cookies.
I love
orange cranberry
muffins, so I
used the zest of 4
oranges and substituted all of the milk with
orange juice.
I have
used this flour mixture to make pies,
orange almond cookies, banana
muffins and pancakes.
Use this recipe as a base for simple
muffins or add
orange or lemon zest, dried fruit, or chocolate to this recipe to create your favorite
muffin.
