Instead of maple
syrup, i poured in hill honey sourced
from my neighbour's rubber plantation in Kerala; the bananas were grown on our farm and the brown sugar was replaced with powdered jaggery (unrefined cane sugar)... i added some
orange rind and left out the cinnamon...
When removing
orange slices
from the sheet of parchment paper, be sure to let excess
syrup drain off before adding to loaf.
Remove the
orange peel
from the sugar
syrup and roll in the caster sugar to generously coat each piece.
While cake is baking make the
syrup by putting the blood
orange juice and sugar into a small sauce pan and heat until the sugar has melted, remove
from the heat and leave until needed.
The inspiration
from the
orange infused maple
syrup came
from my mom's thanksgiving sweet potatoes, which include
orange juice and are superb.
