I had a jar of bitter
orange syrup left over from making candied orange peel, a bar of orange milk chocolate from Divine and some organic oranges, so with those all gathered up, I set to.

Instead of maple
syrup, i poured in hill honey sourced from my neighbour's rubber plantation in Kerala; the bananas were grown on our farm and the brown sugar was replaced with powdered jaggery (unrefined cane sugar)... i added some
orange rind and
left out the cinnamon...
Day 7: Drain the peels (reserve the
orange - infused
syrup for use in cocktails and for mixing with seltzer) and
leave on a wire rack in a cool, dry place until they're no longer sticky (this will take about 1 week).
* Almost as delicious as the candied
orange is the
syrup that is
left behind after boiling the peel.
While cake is baking make the
syrup by putting the blood
orange juice and sugar into a small sauce pan and heat until the sugar has melted, remove from the heat and
leave until needed.
