The combination of
oregano and garlic imparts an Italian flavor to this vinegar, which we keep

on cooking the roast, prepare the rub by mixing all the
oregano, thyme, rosemary, dry mustard, garlic powder, 2 tsp.

oregano, bay leaf, 1/2 teaspoon salt and 1/2 cup to 3/4 cup of the chile sauce (depending

I had everything
on hand except fresh
oregano so I combined the oil, lemon juice, and dry
