The other week when I went to Costco I think my eyes were much larger than belly because I came home with Costco size bags of
organic cauliflower rice, organic mushrooms and organic zucchini squash.
For convenience you can buy
organic cauliflower rice already ready in your local store... or Costco!
I use Trader Joe's frozen
organic cauliflower rice, and this variation is even easier.

cauliflower, I will substitute
organic brown
rice, but yes, then the low carb factor is shot.

organic brown
rice, beans, raspberries, pears, apples, green peas,
cauliflower, and barley.
